This hand-crafted artisanal beer vinegar originated from a wild "mother" (aka vinegar scoby) collected from natural airborne yeasts in Newfoundland. It was then “fed” with stout beer to create a deeply malty vinegar with strong caramel and floral notes.
Use it in any recipe that calls for vinegar (marinades, salad dressings, stir fries etc) or just sprinkle on greens and fish and chips. Inspired by a medieval practice of repurposing waste beer into alegar (sour beer).
Wild Mother Provisions is a feminist food company based in St. John's, Newfoundland that specializes in heritage foods from Britain and Ireland. Mothers have always been associated with the beginnings of life and the preparation of food, so their focus is on traditional foods that have sustained people for centuries (and were likely once made by someone’s mother).
